Belgian chef Martijn Gobert of WouWou, a unique location for private parties and workshops, prepares a Wild Boar Köfte with fresh naan bread and fire-roasted Salsa.

Martijn Gobert is also a hunter himself and specializes in open-fire cooking.

Köfte of the fire with fresh naan bread

Ingredients

Naan bread (for 4 pieces)

  • 400 g self-raising flour
  • 300 g skyr or Greek yogurt
  • 4 g salt
  • 1 tsp Ras El Hanout
  • Garlic coriander oil (for finishing)

Charcoal mayonnaise

  • 4 leeks
  • 500 ml salad oil
  • 2 egg yolks
  • 2 tbsp mustard
  • 2 tbsp vinegar
  • Pepper and salt

Mango beetroot salsa

  • 4 beetroot
  • 1 mango
  • 1 chili pepper
  • Handful of rocket lettuce
  • 1 small radicchio
  • Good vinegar
  • Pepper and salt

Grilled lettuce

  • 2 lettuce hearts
  • Oil

Köfte

  • 500 g minced wild boar
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 1 small red onion, finely chopped
  • Handful of fresh cilantro, finely chopped
  • 1 tsp cumin powder
  • 1/2 tsp cinnamon
  • Pepper and salt

 

Preparation

  1. Making naan bread
  1. Mix flour, skyr, salt and Ras El Hanout in a bowl.
  2. Knead the mixture into a smooth dough and let it rest for 30 minutes.
  3. Divide the dough into four portions and roll out thinly.
  4. Fry them over an open fire until they are golden brown.
  5. After frying, brush with garlic coriander oil.
  1. Charcoal mayonnaise
  1. Roast the leeks on an open fire until they are black.
  2. Let cool and mix with salad oil.
  3. Beat egg yolks with mustard and vinegar.
  4. Slowly add the strained leek oil, while mixing into a mayonnaise.
  5. Season with salt and pepper.
  1. Mango and beetroot salsa
  1. Roast the beetroot on the stove, let it cool and cut into cubes.
  2. Grill the mango until caramelized, cut into cubes.
  3. Finely chop the chili pepper and mix with beetroot, mango, rocket salad and radicchio.
  4. Drizzle with vinegar, season with salt and pepper.
  1. Grilling lettuce hearts
  1. Halve the lettuce hearts and brush with oil.
  2. Grill briefly until they have nice streaks.
  1. Preparing köfte
  1. Mix the minced meat with garlic, ginger, onion, coriander, cumin, cinnamon, salt and pepper.
  2. Form sausages and thread onto skewers.
  3. Grill over open flames until cooked and grilled.

Serve

Serve the köfte on the warm naan bread, along with the salsa, grilled lettuce and a scoop of charcoal mayonnaise.
