At Wild Van Vuur , cooking does not start in the kitchen, but in the field: with respect for the animal, the season and the environment. Ingredients

  • 1 full rabbit
  • Olive Oil
  • Coarse sea salt
  • Freshly ground black pepper
  • Fresh rosemary or thyme
  • White asparagus
  • Salt (for cooking water)

For the wild garlic butter:

  • Butter (softened)
  • Fresh wild garlic
  • Lemon juice
  • Pepper and salt

Finish:

  • Wildflowers

Preparation

For this preparation, a rabbit is strung on an asado skewer and slowly cooked over glowing hardwood coals.
The fire is first built up slowly into a bed of warm, stable heat, without high flames. The rabbit is lightly rubbed with olive oil, coarse sea salt, freshly ground pepper and a sprig of rosemary or thyme, after which it is placed diagonally next to the fire.
Turning the meat regularly and allowing it to cook patiently will keep it juicy and give it a subtle smoky flavor that perfectly complements the fine structure of rabbit.
Meanwhile, the white asparagus is carefully peeled and gently cooked in lightly salted water. They can rest in their cooking liquid afterwards so that they remain buttery soft and full of flavor.
For the wild garlic butter, soft butter is mixed with finely chopped wild garlic, a little lemon juice, salt and pepper, which provides a fresh, spicy touch that contrasts nicely with the roasted meat.
When the rabbit is cooked, it is removed from the skewer and cut into nice pieces. The warm asparagus is arranged on the plate, with the juicy meat on top. A quenelle of wild garlic butter slowly melts over the whole and connects all the flavors. The dish is finished with a handful of wildflowers.
