TOTAL PREPARATION TIME : 30 minutes

SUPPLIES IN THE KITCHEN:

  • Sharp kitchen knife
  • Chopping board
  • Casserole
  • Tray for the apple and onion
  • Toaster
  • tablespoon

 

INGREDIENTS:

  • 1 fresh liver of a roe deer not older than two years

  • 2 Granny Smith apples
  • 2 sweet onions
  • 5 tbsp cinnamon
  • 4 TBSP sweet soy sauce
  • Butter
  • 2 slices of white bread per person

 

PREPARATION:

  • Toast the bread until nicely browned
  • Peel the onion and cut it into wedges, put it in a bowl
  • Peel the apple, remove the core and cut into pieces of about 1 cm, put these in a bowl as well. Add the cinnamon and stir so that the apple is well coated
  • Heat the pan with a small knob of butter
  • When the butter is nicely browned, fry the onion in it over medium heat
  • Cut off the thick membrane of the liver and cut away the round part where a vein used to be, cut the liver into pieces of about two cm.

For this you need a sharp knife otherwise the liver will fall apart

  • If the onion is nicely browned, this can be done with the liquid in a container
  • Melt a good knob of butter in the pan. When the butter is nicely browned, fry the liver nicely brown all over medium heat.
  • Lower the heat and pour the Ketjap Manis over it, stir well. Ketjap Manis contains sugar and it should not burn because then it will become bitter
  • After 2 minutes you can spoon the sauce and liver onto your plate or toast and you can prepare the plates as you like.
